You’ll love these healthier, sheet pan sweet potato nachos! Simply roast up your sweet potato fries and top with taco meat and your favorite nacho toppings! It’s perfect for a game day appetizer, afternoon snack or weeknight meal.

You guys are going to love this twist on nachos! These loaded sweet potato fries are topped with ground beef using our taco seasoning and your favorite nacho toppings (I’m loving these with pickled red onions right now).

Sweet Potato Nachos Recipe

When you want a healthier game day food option to replace tacos and nachos, this recipe is a must make. You can serve it on a big party platter, or plate up individual servings. It’s also perfect for a kid-friendly weeknight dinner.

Why This Recipe is a Favorite

  1. Cleaner than traditional nachos. A sweet potato is much healthier than tortilla chips, and the toppings are gluten-free, Paleo, and Whole30 compliant, if that’s your thing!
  2. Perfect for a quick and easy weeknight dinner. Everything comes together in a snap. While the fries are roasting in the oven, you can make the guacamole and prep the toppings.
  3. A great meal idea for taco Tuesday! You can serve the sweet potato nachos as a family-style appetizer. For a main dish, make my Chipotle Barbacoa recipe to go along with it.

Ingredients and Substitutions

These are the ingredients that I used, but this recipe is customizable, so feel free to adapt it to your specific nutritional needs.

  • Ground Beef: I recommend using a lean blend of ground beef, like 85/15 or 90/10. Ground chicken and ground turkey are good healthy substitutions!
  • Taco Seasoning: I make my own sugar-free taco seasoning, but if you have a store-bought one you like, go for it! Keep an eye on the sodium in a store-bought option though.
  • Sweet potatoes: You can cut them into wedges or slice them into rounds. Keep that in mind when you’re choosing the taters, because the larger they are, the more difficult they are to cut!
  • Olive oil
  • Seasonings: You’ll just need a bit of coarse sea salt, cumin, and garlic powder to season the sweet potato slices.

The sweetness in the potatoes is awesome against the spice of the ground beef, and homemade taco seasoning is unbelievably easy and 110% better than anything you'll get at the store. If you have any leftover, make some tostadas, too!

For this recipe, I oven roasted the sweet potatoes, but you can always make them in the air fryer, if that's easier for you! Once they're roasted, just pile on your favorite toppings, and dig in!

Sweet Potato Nacho Toppings

It's hard to choose a favorite part of this dish, but I think the toppings are the best part. I love piling up the nachos and getting my hands messy eating!

You might also want to include sour cream and/or shredded cheese on your sweet potato nachos.

Topping nachos (or anything lately) with pickled red onions has been a fave lately, but there's a little bit of science behind why it's so good! The acid from the pickling process elevates the flavor of the dish without the fire of raw onions.

The red onions will brighten anything spicy, like they do here for the roasted sweet potato fries and spicy ground beef. But you can also serve them over hard boiled eggs, on sandwiches and salads, or straight from the jar.

Taco Loaded Sweet Potato Nachos

This sweet potato nachos recipe makes a healthier version of beef nachos! They're a delicious game day appetizer, snack, or weeknight meal.

Ingredients

  • 4 small sweet potatoes scrubbed clean, and ends trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoons salt
  • 1/2 teaspoons cumin
  • 1/2 teaspoons garlic powder

Taco Ground Beef

  • 1 lb ground beef
  • 2 tablespoons taco seasoning homemade or store-bought
  • ¼ cup water

Quick Guacamole

  • 1 avocado peeled and pitted
  • 1 teaspoons fresh cilantro
  • 2 teaspoons lime juice (1/2 fresh lime)
  • ¼ teaspoon salt

Instructions

Prepare the Sweet Potato Fries

  • Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper; set aside.
  • Using a sharp knife, slice sweet potatoes into ½ inch wide strips/wedges. Stir the oil and seasonings together in a mixing bowl.
  • Add potatoes to the oil/seasoning and toss well to coat. Arrange wedges flat on prepared baking sheet. Roast in preheated oven for 35-40 minutes, flipping them over half way through cooking time.

Prepare the Beef

  • While the fries are baking, brown the ground beef in a large skillet over medium heat. Break the beef apart and turn often as it cooks.  Drain any excess grease (optional).
  • Stir taco seasoning and water into the skillet with the beef. Simmer together over medium heat for 8-10 minutes, stirring often.

Make the Guacamole

  • Add all ingredients to a mixing bowl. Use a fork or potato masher to mash the avocado. Stir to combine seasonings with avocado. Taste for seasoning, adding more salt and pepper as desired. 

Assemble the Nachos

  • Arrange the fries on a large platter, or divide among several individual plates.
  • Top with ground beef, guacamole, and your favorite nacho toppings. Garnish with extra cilantro and lime slices. 

Notes

To make a scoopable version of sweet potato nachos, cut the potatoes into thin slices rather than wedges. Thinner slices will cook faster, so watch carefully to prevent them from burning.
