Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper; set aside.
Using a sharp knife, slice sweet potatoes into ½ inch wide strips/wedges. Stir the oil and seasonings together in a mixing bowl.
Add potatoes to the oil/seasoning and toss well to coat. Arrange wedges flat on prepared baking sheet. Roast in preheated oven for 35-40 minutes, flipping them over half way through cooking time.
Prepare the Beef
While the fries are baking, brown the ground beef in a large skillet over medium heat. Break the beef apart and turn often as it cooks. Drain any excess grease (optional).
Stir taco seasoning and water into the skillet with the beef. Simmer together over medium heat for 8-10 minutes, stirring often.
Make the Guacamole
Add all ingredients to a mixing bowl. Use a fork or potato masher to mash the avocado. Stir to combine seasonings with avocado. Taste for seasoning, adding more salt and pepper as desired.
Assemble the Nachos
Arrange the fries on a large platter, or divide among several individual plates.
Top with ground beef, guacamole, and your favorite nacho toppings. Garnish with extra cilantro and lime slices.

Notes
To make a scoopable version of sweet potato nachos, cut the potatoes into thin slices rather than wedges. Thinner slices will cook faster, so watch carefully to prevent them from burning.
