Peanut Butter Waffles

When you want a special, kid-friendly breakfast, peanut butter waffles are a winner! With just two ingredients, this mini waffle recipe is a snap to make, and they taste so much better than frozen!

Our family loves our waffle maker. There’s something special about kicking off the weekend with a breakfast of fluffy waffles or homemade pancakes. Everyone can customize their stack with their favorite toppings, and it’s a fun family time around the kitchen table!
But when it comes to appetite, many kids have eyes that are bigger than their stomach, right? So, rather than making full-sized waffles, I make them kid-sized. With this mini waffle recipe, there is less food waste.
Peanut butter waffles are a delicious, family breakfast solution! You only need two real food ingredients to make them: peanut butter and eggs. And honestly, if you don’t have a mini waffle maker, it isn’t a problem—this recipe works perfectly using a traditional waffle maker, too!

Here are a few of my mom-tested cooking tips for making this recipe. I’ve made it countless times to save you from a failed attempt.
- Be sure to preheat the waffle maker. If you put batter on the cold grates, the outside will burn before the inside is fully cooked.
- To prevent sticking, spritz or grease the grates with olive oil or non-stick food spray. You’ll want to do this before adding more batter.
- You can double the ingredients to make more peanut butter waffles. As written, this recipe makes enough batter for about 6 mini waffles or 2-3 regular-sized waffles.
- If you plan to freeze them, be sure they are completely cool first. Otherwise, they’ll get soggy when you reheat them. I also recommend separating them with parchment or waxed paper to prevent them from freezing together.
If you have big eaters in your family, consider also making a vegetable breakfast casserole with hash brown crust. It’s hearty and really delicious, too! Or maybe baked French toast with a side of air fryer turkey bacon!
Ingredient Notes and Substitutions
eggs: Always use the freshest eggs you can afford. I usually get large, cage-free eggs, but any kind will work fine. Making the waffle batter using egg whites only might work, but I haven’t tested it, so I can’t guarantee the results.
peanut butter: Use any creamy variety of peanut butter your family likes. If you have a peanut allergy, swap it for any other nut butter or sunflower butter.
mix-ins: The mini waffles are pretty tiny, but you can try adding mix-ins, such as fresh fruit, mini chocolate chips, ground cinnamon, or vanilla extract.
Equipment Needed
To make this easy breakfast recipe, you’ll need a traditional or mini waffle iron. I have a Dash mini waffle maker, which cooks just one at a time.
If you have a big family or just want to cook breakfast more quickly, get yourself a double mini waffle maker!
You’ll also need cooking spray. I like to use an avocado oil cooking spray.

Making Mini Peanut Butter Waffles

Jump to RecipeStart by heating up the mini waffle maker. This way, it will be hot when you add the batter.


- Make the waffle batter. Use a whisk to combine the eggs and peanut butter. Whisk it really well because you want the batter to be smooth.
- Grease the plates, then add batter. Place about two tablespoons of batter in the center of the waffle iron. (About ⅓ cup batter for a regular waffle iron.)


- Close the lid and let the waffle cook until golden brown. It takes about 3 minutes for mini waffles to cook. Your time may vary, depending on your model. Some units have a light that turns off when the waffles are cooked.
- Repeat until all the batter has been cooked. Plate them up, top with butter, syrup, and/or toppings of your choice.
Make it kid friendly: Give your kids choices of toppings and set them out in paper cups. Then, encourage them to create their own delicious masterpiece!

Topping Ideas
Depending on whether you want savory or sweet waffles, there are plenty of topping options. Here are a few ideas:
- fresh fruit: berries, banana slices, peaches, or even warm cinnamon apples
- whipped cream or coconut whipped cream
- gravy: If you've never enjoyed waffles topped with chocolate gravy, you're in for a real treat!
You could even use the mini waffles in place of bread to make chicken and waffle sandwiches! Just make some air fryer chicken nuggets, tenders, or patties.
For dessert, add yogurt and berries on top to make them like a fruit pizza. Or add a scoop of ice cream on top!

Storing and Freezing Mini Waffles
Refrigerate any leftover waffles in an airtight container and they'll stay good for 2 or 3 days. You can enjoy them cold or at room temperature, but they really do taste best when they're warm.
In the freezer, they'll keep for up to 2 months. To prevent them from sticking together, place a square of parchment paper or waxed paper between them.

It depends on your waffle maker and if it's non-stick, the kind of oil you use and your waffle batter. Typically one light spritz of cooking oil will last for 1-2 waffles, but your mileage may vary depending on your appliance and the recipe. Test it out with the first waffle and see how it goes.
In theory, it might work, but the chunkiness could make it more difficult to combine with the eggs. You can certainly try it!

Do you always grease your waffle maker? Both of mine recommend no greasing.
You might try brushing on some oil instead of spraying it with a non-stick spray instead. Or give it a try without and see if your waffle iron needs something to make sure the waffles don’t stick.
