My mom used to refer to the first day of school as “Mother’s Day.” Very funny, Mom. Well, it’s that time of year again! It’s back to school time, and my family hasn’t quite adjusted yet to the new, busy rhythm of the season just yet. I still have to coax my oldest out of bed in the early morning, after finally forcing to get myself out of bed, I mean.

The days feel long and a lot more hectic than we’re used to, so we’re all tired when dinner time rolls finally around. My brain is saying, “Make something healthy!” but my body is saying, “Order takeout!” It’s the eternal weeknight struggle.

The Club Grilled Chicken Salad

Enter Taylor Farms’ NEW chopped salad kits, a complete and healthy meal in one bag. Yesterday I tried the Club Grilled Chicken Salad kit.

It has fresh romaine, kale, and cabbage, grilled chicken, uncured bacon, and a blue cheese salad dressing all inside, so it’s got everything you need for a full meal. Most importantly, it’s absolutely the easiest dinner I’ve made for my family in weeks!

And we all liked it! We liked it so much, in fact, that we had it two nights in a row! Whenever I find a meal that everybody in the family approved of, we stick with it.

I thought it might be fun to add in a few of the odds and ends I had around, so I cut an avocado, sliced a couple of tomatoes, and halved a few soft boiled eggs (I make my eggs in the air fryer!) to put on top each plate.

I like to call meals like this DDD: Dinner is Done & Delicious!

Truth be told…

I totally rely on awesome convenience items like this. I’m a person who loves to cook, and I mean really love it. Still though, there are a lot of evenings when I’m just too worn out to think about cooking for family, let alone actually do it.

Between work, kids, and everything else in life, products like this are very much appreciated by busy people like me! What a relief.

Club Grilled Chicken Salad

Ingredients

Club Grilled Chicken Salad

  • 1 Taylor Farms Club Grilled Chicken Salad Kit

Salad Toppings

  • 1 avocado
  • 1/2 cup cherry tomatoes
  • 1-2 soft boiled eggs

Instructions

Assemble the Salad

  • Open the salad kit ingredients, and arrange them on a large plate or platter.
  • Cut the avocado into wedges, slice the tomatoes in half, and cut the eggs, then arrange on top of the salad.
  • Top with the salad dressing and toss to combine. Sprinkle with cracked black pepper and serve immediately.

Notes

Note: If you’re preparing this salad in advance, leave the dressing on the side until just before serving.
