Onto the skillet with the bacon grease left, add chicken breasts. Cook for about 2-3 minutes and flip to continue cooking for another 2-3 minutes. Internal temperature should be at least 155°. It will continue cooking.


- Whisk together the chicken broth, nutritional yeast and coconut cream. Pour into skillet with chicken along with the sun-dried tomatoes and spinach. Cover and let simmer for 3-4 minutes.

- 1-1½ lbs chicken breast thinly sliced

- 1 cup coconut cream if you buy a can of coconut milk, put it in the fridge for an hour to let the cream separate from the water then use the cream part only
- 1 cup chicken broth
- ⅓ cup nutritional yeast
- ⅓ cup sun-dried tomatoes cut into 1/2 inch pieces, if from a jar, make sure to drain liquid and pat dry
- 1 cup spinach
