  1. Cut bacon into 1 inch pieces and set aside. If using thicker chicken breast pieces, using a sharp knife cut through the center horizontally to create pieces about a half-inch thick. Season with salt, pepper, garlic powder and oregano on both sides of chicken. Set aside.
  1. In a large skillet set to medium heat, cook bacon until nicely crisped (about 4-5 minutes). Remove bacon pieces and set on a paper towel-lined plate. Onto the skillet with the bacon grease left, add chicken breasts. Cook for about 2-3 minutes and flip to continue cooking for another 2-3 minutes. Internal temperature should be at least 155°. It will continue cooking.

Ingredients

  • 6 pieces bacon cut into 1 inch pieces, bacon grease reserved
  • 1-1½ lbs chicken breast thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder

  • 1 cup coconut cream if you buy a can of coconut milk, put it in the fridge for an hour to let the cream separate from the water then use the cream part only
  • 1 cup chicken broth
  • cup nutritional yeast
  • cup sun-dried tomatoes cut into 1/2 inch pieces, if from a jar, make sure to drain liquid and pat dry
  • 1 cup spinach
