This chicken dinner is so delicious you just may fall in love with the cook! This Marry Me Chicken Skillet has savory, juicy chicken breast coated in a mouthwatering cream sauce with bacon, spinach, and sun-dried tomatoes.
6piecesbaconcut into 1 inch pieces, bacon grease reserved
1-1½lbschicken breastthinly sliced
1teaspoonsalt
1teaspoonpepper
1teaspoongarlic powder
1teaspoondried oregano
1cupcoconut creamif you buy a can of coconut milk, put it in the fridge for an hour to let the cream separate from the water then use the cream part only
1cupchicken broth
⅓cupnutritional yeast
⅓cupsun-dried tomatoescut into 1/2 inch pieces, if from a jar, make sure to drain liquid and pat dry
1cupspinach
Instructions
Cut bacon into 1 inch pieces and set aside.
If using thicker chicken breast pieces, using a sharp knife cut through the center horizontally to create pieces about a half-inch thick. Season with salt, pepper, garlic powder and oregano on both sides of chicken. Set aside.
In a large skillet set to medium heat, cook bacon until nicely crisped (about 4-5 minutes). Remove bacon pieces and set on a paper towel-lined plate.
Onto the skillet with the bacon grease left, add chicken breasts. Cook for about 2-3 minutes and flip to continue cooking for another 2-3 minutes. Internal temperature should be at least 155°F. It will continue cooking.
Whisk together the chicken broth, nutritional yeast and coconut cream. Pour into skillet with chicken along with the sun-dried tomatoes and spinach. Cover and let simmer for 3-4 minutes.
Before serving top with bacon pieces. Serve over rice.
