Easy Roasted Broccoli

Making roasted broccoli is really simple, and it’s a healthy veggie that pairs well with almost any protein! Use my recipe and cooking tips to make this delicious side dish.

I promise you, once you make this oven roasted broccoli recipe, you’ll never go back to boiling or steaming again! Roasting vegetables highlights the natural flavor in a way that you just don’t get with most other cooking methods.
The roasted broccoli has crisp, caramelized edges, and an incredible flavor. Just a little sprinkle of nutritional yeast adds a nutty, cheesy flavor that kids find irresistible. All of my kids gobble it up. In fact, we’re actually getting to the point now where I need to make two sheet pans full to feed us all!

Notes and Substitutions
- Broccoli: You can save some time by buying pre-cut florets, or cut a full head of broccoli into bite-sized pieces yourself.
- Oil: I prefer olive oil, but avocado oil is a good substitute.
- Ghee: I used Fourth and Heart ghee because it’s dairy-free and delicious. If you can have dairy products, butter will work.
My Secret Weapon: Nutritional Yeast
I like using nutritional yeast on roasted vegetables for flavorful seasoning and nice texture, too. Nutritional yeast has a rich, salty, *almost* cheese-like flavor to it, and it totally elevates regular veggies to something new. I buy mine at Trader Joes, but I’m starting to see it stocked at regular grocery stores, too. Otherwise, it’s available on Amazon as well.

Oven-Roasted Broccoli

Ingredients
- 4 cups broccoli florets
- 1½ tablespoons olive oil or avocado oil
- 2 tablespoon ghee or butter
- 2 tablespoon nutritional yeast optional
- ½ teaspoon garlic powder
- ¼ teaspoons sea salt optional
Instructions
- Preheat the oven to 425F. Cut the broccoli into bite-sized pieces and transfer to a large bowl.
- Melt the ghee in a small bowl in the microwave or on the stove, whichever you prefer and pour it over the broccoli. Pour the oil, garlic powder, and salt (if using) over the broccoli and toss together.
- Line a baking sheet with parchment paper and spread the broccoli out on top, spacing out the florets as much as possible.
- Roast in preheated oven for 10 minutes, then remove the pan from the oven. Use a large spoon or heat-safe spatula to turn the pieces over. Sprinkle the nutritional yeast over the florets.
- Return the pan of broccoli to the oven for another 5-10 minutes, until roasted, caramelized, and browning but not burnt. *I recommend watching it closely towards the end of the cooking time.

Have you done this with potatoes mixed in? I am trying to use up what I already have and there is only 2 of us in the house.
Hi Tara, That’s a great idea! Potatoes tend to take longer to cook, so I’d dice the potatoes into bite sized pieces and cook them first for maybe 10 minutes, then add the broccoli and roast together. I haven’t tested that so you may need to experiment. Please let me know how it turns out! 🙂 -Laura
