Coconut Mojito Mocktail (Whole30)

Even when I’m not doing a round of Whole30, I’m not much of a drinker. But on hot summer days, I really enjoy sipping on a cold, refreshing drink. I like this Whole30 compliant, non-alcoholic take on a Coconut Mojito (by the way, I came soooo close to calling it a coco-jito, but then I’d have to punch myself in the face).

It isn’t very sweet, but it’s bubbly, light, and hydrating, plus it has all the delicious flavors of summer! I hope you enjoy! And if you do, check out another yummy mocktail recipe – Kombucha Spritzer!

Coconut Mojito Mocktail

Lightly sweetened, bubbly & refreshing, this mocktail is summer in a glass!

Ingredients

  • ½ cup coconut milk
  • 1 small lime
  • 1 8 oz. can lime seltzer
  • 15-20 mint leaves
  • ¼ cup flakey sea salt (optional)

Instructions

Salt Rim the Glasses (optional)

  1. Cut the lime in half and run one piece along the edge of each glass. Pour sea salt in a shallow dish and dip each glass in.

Make the Drink

  1. Divide the mint leaves among 2 tall glasses. Juice the lime and pour half into each glass. 

  2. Muddle the mint leaves into the lime juice, then pour ¼ cup of coconut milk into each glass. 

  3. Add ice to the glasses, then top off with lime @lacroixwater until full (be careful as you pour – bubbles!).

  4.  Garnish with extra lime slices and mint and serve!

Recipe Notes

I use low fat coconut milk because full fat tends to be a little clumpy and not to mix as well into cold drinks. Whatever compliant kind you have will be delicious, though!
