  • Rest the steak before slicing. Letting it rest for 5 minutes keeps it juicy and ensures the slices stay tender.
  • Slice against the grain. This shortens the muscle fibers and makes each bite more tender.
  • Use ripe avocados. The avocado slices and dressing will only be as good as your avocados. They should yield slightly when pressed but not feel mushy.

  • Mixed greens: A fresh base for the salad. Any blend of spring mix, arugula, spinach, or romaine works well.
  • Steak: Sirloin, New York strip steak, ribeye and flank steak all work very well. You could even make air fryer steak bites and use them on your salad!

How to Make the Steak Salad

This recipe is all about layering textures and flavors.

  1. Start by prepping the sweet potatoes. Toss them with olive oil, salt, and pepper, then roast in the air fryer until they’re golden and crispy. Let them cool just slightly while you cook the steak.
  1. Cook the steak. An air fryer makes it quick and easy! Just season generously with salt and pepper, air fry, then let it rest. Slice the steak against the grain.

While the air fryer steak is cooking, make the avocado dressing.

  1. Make the salad dressing. Blend the avocado with lemon juice, garlic, parsley, and chives, then drizzle in olive oil to make it silky smooth. Be sure to taste it and add more seasoning if you think it’s needed.
  1. Assemble the salad bowls. Start with a base of mixed greens, add roasted sweet potatoes, sliced steak, and avocado. Finish with a drizzle of the avocado dressing and toss lightly.

Other Cooking Methods

If you don’t have an air fryer, you can still make this meal. Simply roast the potatoes on a sheet pan in an oven at 400°F for about 25 minutes, or until they are fork tender. Cook the steak on a grill, or pan-sear it in a skillet on the stove top.

For pan-seared steak: Heat 1 tablespoon oil in a cast iron or heavy skillet over medium-high heat. Season steaks with salt and pepper. Sear 3-4 minutes per side for medium-rare, adjusting time for thickness and desired doneness. Let rest 5 minutes before slicing.

Make it kid friendly: For kids who might not love salad greens, serve the components separately: a few slices of steak, roasted sweet potato cubes, and avocado with a small dish of dressing for dipping. It’s fun, customizable, and helps them enjoy the flavors at their own pace.

Ingredients

Salad Ingredients

  • 2 large sweet potatoes cubed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 8 cups mixed greens
  • 1 ½ pounds steak sirloin, strip, or ribeye
  • 2 large ripe avocados sliced
  • ½ cup purple cabbage shredded

Avocado Dressing

  • 1 large avocado pit and skin removed
  • ¼ cup lemon juice 1 large lemon
  • 1 whole clove garlic
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh chives
  • ¼ cup olive oil

Instructions

For the Sweet Potatoes:

  • Preheat air fryer to 400°F (200°C).
  • Cube sweet potatoes into 1-inch pieces. Toss with olive oil, salt and pepper.
  • Spray air fryer tray with avocado oil cooking spray. Air fry for 12-15 minutes, shaking basket halfway through, until tender and lightly crispy. Set aside to cool while you cook the steak.

Air Fryer Steak:

  • Season steaks generously with salt and pepper (about ¼ to ½ teaspoon each on each piece of steak).
  • Air fry at 400°F (200°C) for 6-8 minutes per side for medium-rare.
  • Let rest 5 minutes, then slice against the grain to serve over salad.

For the Dressing:

  • Add all ingredients except oil to a blender. Pulse until everything is slightly broken down.
  • With the blender running on medium-low speed, slowly drizzle the oil in as it blends until incorporated. If desired, season to taste with sea salt and black pepper.

Assemble the Salad:

  • Divide greens into bowls or plates. Top with sweet potatoes, steak and avocado to each bowl. Then drizzle avocado dressing over the salad and toss to combine.
