Instructions
For the Sweet Potatoes:
Preheat air fryer to 400°F (200°C).
Cube sweet potatoes into 1-inch pieces. Toss with olive oil, salt and pepper.
Spray air fryer tray with avocado oil cooking spray. Air fry for 12-15 minutes, shaking basket halfway through, until tender and lightly crispy. Set aside to cool while you cook the steak.
Air Fryer Steak:
Season steaks generously with salt and pepper (about ¼ to ½ teaspoon each on each piece of steak).
Air fry at 400°F (200°C) for 6-8 minutes per side for medium-rare.
Let rest 5 minutes, then slice against the grain to serve over salad.
For the Dressing:
Add all ingredients except oil to a blender. Pulse until everything is slightly broken down.
With the blender running on medium-low speed, slowly drizzle the oil in as it blends until incorporated. If desired, season to taste with sea salt and black pepper.
Assemble the Salad:
Divide greens into bowls or plates. Top with sweet potatoes, steak and avocado to each bowl. Then drizzle avocado dressing over the salad and toss to combine.
Notes
Rest the steak before slicing. Letting it rest for 5 minutes keeps it juicy and ensures the slices stay tender.
Slice against the grain. This shortens the muscle fibers and makes each bite more tender.
Use ripe avocados. The avocado slices and dressing will only be as good as your avocados. They should yield slightly when pressed but not feel mushy.
The air fryer works best for reheating both steak slices and sweet potatoes. Just 3-4 minutes at 375°F (190°C) brings them back to life without drying them out.
