Is there a picky eater in your family? Can’t get them to eat their veggies or are they always picking at their food? Then you’ve got to try these roasted ranch potatoes. The taters are coated in tangy ranch seasoning mix, giving them tons of flavor.

Trust me, the crispy roasted red potatoes are totally irresistible to little ones. It’s a quick side dish to make any night of the week because it only takes 35 minutes. This recipe is sure to become a family favorite!

Ranch potatoes are one of my favorite sides to serve with meals like air fryer grilled chicken and air fryer turkey meatballs. They always turn out tender on the inside with that slightly crispy crunch on the outside.

Ingredients

Grab some baby potatoes, a packet of ranch seasoning (or my homemade ranch seasoning!) and some olive oil and you’ll be ready to make this simple side. Easy peasy and oh so tasty!

  • baby potatoes: My family likes the red ones, so that’s what I used.
  • extra virgin olive oil 
  • ranch seasoning: If you don’t want to make it yourself, pick up a packet of dry seasoning mix in the salad dressing aisle.
  • fresh parsley
  • salt and pepper

Substitutions and Variations

You can use any small, thin skinned variety. Baby yellow potatoes are a good substitute for red! If you can’t find a baby or petite variety, you can also make this recipe by dicing up full size red or Yukon gold taters.

I prefer the flavor of olive oil, but any other heart-healthy oil will work just as well. Even melted butter and ghee are good substitutes. You just need a little bit, to help keep the seasoning adhered to the veggies.

Make this side dish extra yummy by sprinkling parmesan cheese over the slices before serving.

How to Make Ranch Potatoes

Preheat your oven to 400°F (204°C), then line a baking sheet with aluminum foil or parchment paper.

Wash and dry the veggies and then cut them in half.

Add the potatoes to a large mixing bowl, along with the olive oil and ranch seasoning. Toss them with your clean hands or stir well. You want to be sure that everything has a nice coating of oil and seasoning. 

Arrange the seasoned veggies in a single layer on the the prepared baking sheet. Make sure you leave space between them so that they are not touching. Air and heat need to rotate around them to crisp them up.

Cook for 30-35 minutes, or until the ranch roasted potatoes are golden brown. Serve immediately and enjoy!

How to Store Leftovers

Personally, I don't think the dish will last long enough around the dinner table to even have leftovers. But, if there are any, transfer them to an airtight container and store in the refrigerator for up to 4 days. You can freeze the roasted potatoes for a few months too, but keep in mind that they don't reheat super well after being thawed from frozen.

Serving Suggestions

The roasted baby potatoes pair beautifully with simple protein main courses like air fryer chicken drumsticks, Instant Pot pork chops, and BBQ chicken thighs.

They're also great as a healthier option to French fries with kid-friendly dinners like homemade chicken nuggets. I love serving the crispy potatoes with bratwurst and Hawaiian Burgers too.

Make this side dish a success by following these super simple tips for success:

  • Wash the baby potatoes really well before cooking them! You'll want to make sure the skin is clean so that there aren't any funny flavors in the end result.
  • Cut off any blemishes or funny looking spots on the potatoes before you toss them in oil and seasoning.
  • If you choose to use regular size potatoes, cut them into large chunks that are about the same size as halved baby potatoes.

FAQ

Do I need to peel baby potatoes?

Nope! If you are using thin skinned potatoes, you do not need to peel them. Just wash them well and prepare as usual.

Why aren't my potatoes tender?

Fully cooked potatoes should be fork tender. If yours are not, you likely have not roasted them long enough. Make sure you use the cooking temperature and cooking time noted in the recipe.
