Crispy and zesty, Ranch Potatoes are easy to make and your kids will gobble them up! This meal prep side dish is simple to make and tastes great with any protein.

Then stand back and watch as they devour the food from their plate! Trust me, any food with ranch is totally irresistible to little ones.

But there are plenty of reasons for you to love this roasted baby potatoes recipe, too!

First, it’s a quick and easy sheet pan side dish. Just line your baking sheet with foil or parchment paper and you’ll have the easiest clean-up ever!

It only takes 35 minutes to make, but it’s a meal prep recipe, so it’s a time saver, too. If you spend a few minutes on a weekend slicing and freezing the potatoes, you can use them to make meal prep dinners throughout the week!

For a side dish like this one, just thaw, toss them in oil and seasoning, then roast them up any time you want them.

Here are my mom-tested cooking tips for making this side dish. I’ve made this countless times to save you from a failed attempt.

  1. Wash the baby potatoes really well before you cut them. You’ll want to make sure the skin is clean so that there aren’t any funny flavors in the end result.
  2. Cut off any blemishes or funny looking spots on the potatoes before you toss them in oil and seasoning.
  3. If you need or want to use regular sized potatoes, cut them into large chunks that are about the same size as halved baby potatoes.
  4. Line your sheet pan with foil or parchment paper for easier clean-up.

Grab some baby potatoes, olive oil, and make some homemade ranch seasoning mix, (or a buy a packet from the store).

Substitutions and Variations

My family likes red potatoes, but you can use any small, thin skinned potato your family likes. Baby yellow and fingerling potatoes are a good substitute for red! If you can’t find a baby or petite variety, you can just dice up full size red or Yukon gold taters.

I prefer the flavor of olive oil, but any other heart-healthy oil will work just as well. Even melted butter and ghee are good substitutes. You just need a little bit, to help keep the seasoning on.

Make this side dish extra yummy by sprinkling freshly grated parmesan cheese over the slices before serving.

How to Make Ranch Potatoes

  1. Wash and cut the red potatoes in half.
  1. Combine the ranch seasoning with oil.

  1. Toss the baby reds with the ranch mixture. You can use a spoon, but I prefer to use my clean hands. The goal is to make sure they all have some seasoning.
  1. Arrange the ranch potatoes on a foil-lined sheet pan. Be sure to leave some space between them so they develop nice, crispy edges.
  1. Cook for 30-35 minutes, or until the roasted potatoes are golden brown. Serve immediately and enjoy!

How to Store Leftovers

Should there be any leftovers, transfer them to an airtight container and keep them in the refrigerator for up to 4 days. 

Unfortunately, roasted potatoes do not freeze well. The consistency changes too much during the freezing and thawing process. It's almost impossible to get them crispy again.

Meal Ideas for Ranch Potatoes

This side tastes great with meals like air fryer chicken drumsticks, Instant Pot pork chops, and BBQ chicken thighs.

It's also a healthier option to French fries with kid-friendly dinners like homemade chicken nuggets. I love serving the crispy potatoes with brats and Hawaiian burgers too.

Recipe FAQs

Do I need to peel baby potatoes?

Nope! If you are using thin skinned potatoes, you do not need to peel them. Just wash them well and prepare as usual.

Why aren't my potatoes tender?

Fully cooked potatoes should be fork tender. If yours are not, you likely have not roasted them long enough. Make sure you use the cooking temperature and cooking time noted in the recipe.

Ingredients

  • lbs baby red potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons ranch seasoning or 1 packet dry ranch reasoning
  • 1 bunch parsley chopped, for garnish

Instructions

  • Preheat the oven to 400°F (20°C). Line a baking sheet with foil or parchment paper and set aside.
  • Wash and dry the potatoes, then use a knife to cut each of them in half.
  • Add potatoes, olive oil and Ranch seasoning to a large mixing bowl. Using a large spoon, stir the mixture well to thoroughly coat the potatoes.
  • Arrange the seasoned potatoes on the baking sheet in a single layer, leaving space between them so they are not touching.
  • Cook for 30-35 minutes or until potatoes are golden brown and can be pierced easily with a fork.

Notes

  • This recipe can be made with any variety of potato with a thin skin, such as Yukon Gold or fingerling.
