Lettuce is so overrated. Ok — not really, because I have tons of yummy salad recipes, like this spinach, blue cheese, and bacon salad. But when it comes to this brussels sprouts salad, lettuce definitely is overrated! This delicious and healthy side dish is crispy, crunchy and loaded with beautiful flavor combinations.
The creamy goat cheese with tart cranberries is just to die for, and the sweet touch of apples with a nutty addition of toasted pecans is *chef’s kiss*. The homemade apple cider vinaigrette brings the entire dish together into a melody of deliciousness.
I know a lot of people who think sprouts are “mushy and gross”. If you are one of these people, I think you will be incredibly surprised at how much better shaved Brussel sprouts taste!

Here’s the list of simple ingredients that you need to make this side salad:
- Brussels sprouts: Shaving the sprouts is easy to do, but if you’re short on time, you can find packages of them in the produce section. Washed, trimmed, and ready to use!
- dried cranberries: If you can’t find cranberries, or don’t care for them, dried cherries and dried apricots are great substitutes.
- chopped toasted pecans: Toasted walnuts are great substitute.
- crumbled goat cheese: Feel free to use a different variety, like Feta or Blue cheese.
- sliced apple: Use your favorite variety. Gala, Honeycrisp, Pink Lady, McIntosh, and Granny Smith are all good choices.
- red onion
- salt and black pepper
Note: You can save money by buying raw pecans in the bulk food section. Just toast them in a dry skillet over medium heat for a couple of minutes.

Apple Cider Vinaigrette Ingredients
- apple cider vinegar
- olive oil
- Dijon mustard
- honey or maple syrup
- minced garlic
- salt and black pepper

Variations
- Change up the dressing ingredients by using stone ground mustard or spicy brown mustard in place of Dijon. And while apple cider vinegar gives the best flavor to this dressings, you can use white wine vinegar or balsamic vinegar instead!
- For a dairy-free salad, feel free to use dairy-free cheese, or just omit the cheese altogether.

This easy salad comes together with just a few quick steps. Here’s what you need to do to get it on your dinner table in just minutes:
In a large bowl, combine the shaved Brussels sprouts, dried cranberries, toasted nuts, apple slices, red onion, and goat cheese.

Then, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper in a small bowl until well combined.
