Brussel sprouts
trimmed and thinly sliced or shaved

dried cranberries

cored, peeled, and thinly sliced or diced

red onion

For Apple Cider Vinaigrette

Instructions
In a large bowl, combine the shaved Brussel sprouts, dried cranberries, toasted nuts, apple slices, red onion, and goat cheese.
In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.
Pour the vinaigrette over the salad and toss until everything is evenly coated.
Let the salad sit for 10-15 minutes to allow the flavors to meld. Serve immediately.
Notes
To easily shave the Brussel sprouts, use a mandolin, or the large holes on a box grater.
