How Mango Guacamole was Born
Hint: A mommy mango and a daddy avocado didn’t fall in love and get married.
As I walked the aisles of the grocery store this morning, I saw a huge display of gorgeous mangos. I thought, “Maybe I’ll make some mango salsa!” That’s one of my go-to recipes. It’s SO good. But then I turned and saw another display, this time of avocados.
Okay, now close your eyes. Imagine me standing in the produce section, my kids in the cart. Now picture a giant lightbulb turning on above my head. GIANT. Here is my idea – Manga-mole! By that I mean Mango Guacamole. Wait, did I seriously just call it Mango-mole? Oh man, that’s rather lame. Maybe I should call it Guaca-mango instead!? Nevermind, I’ll just go back to the classic, plain old Whole30 Mango Guacamole. Okay, now that the name is settled, we can all be on the same page.
You wouldn’t believe how simple the recipe for Mango Guacamole is!
The simplicity is what I love most about this recipe. It came together quickly and was jam-packed with easy, familiar tropical flavors. Mixed together, they really do make a fun and exciting spin on classic guacamole. Even better, it’s a Whole30, Paleo, and Gluten Free friendly condiment. I dip plantain or tortilla chips in it or enjoy it with my Whole30 Barbacoa Salad Bowls. It’s pretty versatile!
Like many of my recipes, Whole30 Mango Guacamole is designed to be customized to suit your tastes. If you like things a little extra spicy, add some more jalapeño. You may like more lime or salt. One of the best things you can do as a home cook is taste, taste, and taste everything you cook as you go. Adjust accordingly. It’ll help you learn to be a better cook, of course. More importantly, though, it’ll help you become more familiar with your own tastes.
Mango Guacamole (Whole30)
Sweet, juicy mangos, spicy jalapeno, creamy avocado, and bright lime juice are just some of the ingredients that make this Whole30 Mango Guacamole recipe something truly special. Serve with tortilla or plantain chips!
- 1 ripe mango
- 3 ripe avocados
- Juice of 1 lime
- 2 tbsp chopped red onion
- 1/2 large vine tomato
- 1 medium bunch of cilantro
- 1/2 small jalapeño
- 1/2 tsp salt
- 1/4 tsp pepper
- Cut avocados in half, remove the pit, and slice in crossed pattern. Scoop out the insides with a large spoon into a bowl and add the lime juice. Dice the tomato and red onion and add to avocado mixture. Add salt and pepper and stir.
Cut the jalapeño in half and remove seeds. In your blender, pulse together the mango, 1/2 of the jalapeño, and a large handful of cilantro with the large stems removed.
Pour over the avocado mixture. Garnish with cilantro and extra lime, and serve with tortilla or plantain chips and veggies.
