Health Benefits
Drinking homemade fruit juice helps to keep you hydrated, but it also supplies your body with valuable vitamins and minerals:
- Juiced apples contain vitamin C, potassium, and vitamin K.
- Juiced carrots contain rich amounts of vitamin A and beta carotene, plus other vitamins and minerals like vitamin C, vitamin B6, and manganese.
- Juiced beets contain potassium, folate, iron, and other important vitamins and minerals.
❗IMPORTANT HEALTH INFO: If you’re prone to low blood pressure or kidney stones or are diabetic, don’t drink beet juice without consulting a physician. Beets can also cause urine and stools to become pink or red, which is harmless but can be confusing or alarming.

- Any kind of apple will work! I personally prefer snacking apples like honey crisp, fuji, and pink lady because they tend to be sweeter and less tart than baking apples.
- If you’re using a blender to make juice, you’ll need to add liquid. I recommend using either water or fruit juice. Apple juice, white grape juice, or orange juice would work well.
- For an extra kick (optional): Add 1-2 inches of fresh ginger.
- For extra sweetness (optional): Add 2 pears or 2 oranges.
Instructions

Step 1: Prep the produce!
Wash the beets, carrots, and apples well.
👉 I wash produce by filling a large bowl with cold water and a splash of white vinegar, then soaking the produce for about 10 minutes before rinsing it well under cold water.
Remove the apple stems and cut away any mushy or shriveled spots on the produce. Cut the produce into pieces small enough to fit through the juicer chute.
👉 You don’t need to peel the apples, carrots, or beets. Fruit and vegetable skins are full of important vitamins and minerals!

Step 2: Make the juice!
- Juicer: Add the beets, carrots, and apples to your juicer. Turn it on and juice according to the user instructions of your juicer. Once all the juice is extracted, turn off the juicer.
- Blender: Add the beets, carrots, apples, and liquid to your blender. Blend on high for 3-5 minutes, until fully combined. Pour through cheesecloth or a fine mesh strainer to separate the juice from the pulp.

Step 3: Serve and enjoy!
Serve the juice right away or store it covered in the refrigerator for up to 3-4 days. Don’t leave the juice at room temperature for longer than 2 hours, per USDA.
👉 The juice will separate as it sits, so stir it quickly before drinking.
Expert Tips & Info
- Soak the carrots and beets in cold water for 10-15 minutes before juicing. This helps you get to maximum liquid extraction when juicing!
- Beets will stain your hands and clothes, as well as plastic and other porous surfaces. Wear gloves to avoid pink hands and choose your work surfaces carefully!
- Make sure to wash all the ingredients well before juicing. Soak your produce in cold water with a splash of vinegar for about 10 minutes, then rinse each piece well under cold water.
- This recipe yields about 3 cups of prepared apple beet carrot juice (24 oz.), but the exact amount will depend on the efficiency of your juicer!
- For the best taste, serve your homemade juice cold. Either chill the fruit before juicing or serve it in a glass over ice.
FAQ
The foam on top of homemade is produced because air is forced through the juicer along with the fruit. Skim it off and discard it, or simply mix the juice until the foam mostly dissolves.
Homemade juice freezes great! Freeze in mason jars, single-serving soup cubes, or seal the juice in any other freezer-safe container. Be sure to leave space in whatever container you use for expansion once it freezes! Freeze for up to 3 months for the best taste, and allow it to defrost in the refrigerator overnight, then stir before serving.
Juicer pulp can be composted. I sometimes mix it with an egg, form the mixture into patties, and pan-fry it to make fritters (for people or dogs to enjoy!). It can also be given to backyard chickens. I like to freeze leftover carrot pulp and use it when I make vegetable stock.
