1cupchickpeasdrained
½cuptahini
2tablespoonslemon juice(1 small lemon)
¼cupolive oil
3clovesgarlicpeeled
½teaspoonground cumin
1teaspoonsea salt
¼teaspoonblack pepper
Instructions
Drain liquid from jar of roasted red peppers, and use paper toweling to pat dry. Dice 1 tablespoon of peppers to use for garnish.
In the bowl of a food processor, combine all ingredients, processing until smooth, and scraping down sides as needed.
Taste and adjust seasonings, if necessary.
Transfer to a serving bowl, drizzle with olive oil, and garnish with diced peppers.
Notes
If you are using store-bought roasted red peppers, drain the liquid from the jar and use paper toweling to pat the peppers dry. This will prevent the hummus from being thin/runny.
