This pork stir fry comes together in just 20 minutes, making a delicious meal for a busy night. Stir frying is an easy way to cook pork tenderloin for dinner!

1pork tenderloin(about 12-16 ounces), cut into thin strips
1cuppineapple chunksfresh or canned, *drain, but reserve 3 tablespoons juice

Instructions
Make the stir fry sauce (¼ cup low sodium soy sauce, 2 tablespoons cornstarch, 2 medium garlic cloves, 1 tablespoon minced ginger, 3 tablespoons pineapple juice, 1 tablespoon rice vinegar, 2 teaspoons sesame oil, ½ teaspoon kosher salt, and ½ teaspoon black pepper): In a small bowl, whisk all sauce ingredients until smooth, breaking up any clumps of cornstarch. Set aside.
Heat a large skillet or wok over medium-high heat. When hot, add 1 tablespoon sesame oil and 1 tablespoon avocado oil.
When oil begins to shimmer, add 1 large onion, 2 medium garlic cloves, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Sauté, stirring constantly, for 1-2 minutes until fragrant.
Add 1 red bell pepper and 1 green bell pepper. Sauté for 3-4 minutes until softened. Transfer veggies from pan into a bowl and set aside.
Add another 1-2 tablespoons of oil if your pan is looking dry. Add 1 pork tenderloin strips to pan and sear for 2-3 minutes per side until cooked through and lightly golden.
When pork is cooked, return veggies to the pan and add 1 cup pineapple chunks.
Pour in the sauce and toss everything together. Let sauce thicken for 2-3 minutes, stirring occasionally.
Serve over rice or noodles, garnished with thinly sliced 1 green onion and ½ teaspoon sesame seeds.
Notes
Sesame oil has a distinct flavor and is often used in Asian dishes, but it can be a little pricey. Feel free to substitute with avocado or olive oil.
Rice vinegar is another common ingredient in Asian cuisine. White wine vinegar is a good substitute.
