These roasted air fryer baby potatoes are crispy on the outside, fluffy and flakey on the inside, and absolutely delicious! They’re the perfect easy side dish for breakfast, lunch, or dinner.
Preheat the air fryer to 400°F (204°C). If your air fryer doesn't have a preheat setting, simply turn it on and wait about 5 minutes.
Wash the potatoes and cut them in half. Transfer to a bowl and rinse well under cold water to wash off potato starch. Use a few paper towels to pat the potatoes dry.
Toss the potatoes with oil, salt, pepper, and garlic powder. If using any additional seasonings, carrots, or parmesan, mix it now. Mix until the potatoes are coated evenly.
Transfer the potatoes into the air fryer basket, being careful not to fill the basket more than 1/3-1/2 full.Close the air fryer and cook for 20-22 minutes, stopping halfway to shake the basket or turn the potatoes with a spatula.
Check the potatoes close to the end of cook time, and cook until golden brown and crispy on all sides. Optionally, sprinkle with minced parsley. Serve immediately.

To prep in advance and cook later: Leave the cut potatoes submerged in cold water. This prevents them potatoes from browning with exposure to the air. Leave them in the water and store in the fridge for up to a day!
