Preheat your air fryer at 400°F (204°C) for 5 minutes.
In a large bowl, toss together the potato slices and 2 tablespoons of olive oil. When the potatoes are evenly coated in oil, sprinkle over the salt, garlic powder, onion powder, and pepper and toss again.
Very carefully brush your hot air fryer basket with the remaining tablespoon of olive oil. Add as many potato slices as will fit– you can overlap the edges a little but keeping the potatoes in a single layer will help them get crispy!
Cook the potatoes at 400°F (204°C) for 8 minutes, then give the air fryer basket a shake and cook for an additional 3-5 minutes, or until the potato slices are crisp and golden brown.
Repeat steps 3-4 with any remaining potato slices.
Enjoy immediately, garnished with fresh chopped parsley or sliced green onions and your favorite dipping sauce.
Notes
I love the flavor and texture of yukon gold potatoes but you could use russet or red potatoes if you prefer!
Olive oil helps the outside of the potatoes crisp and helps prevent them from sticking to the air fryer basket.
You can season the potato slices any way you like so feel free to use your favorite spice blend – I'm keeping it simple with salt, pepper, onion powder, and garlic powder.
