Different cuts of bacon: I recommend using a medium cut of bacon here. However, you can use thick-cut bacon or thin-cut bacon; just be sure to adjust the cooking time. A thinner cut will crisp up faster and a thick cut might take a little longer.Different flavors of bacon: Use your favorite style of bacon! We like applewood-smoked bacon, but hickory-smoked bacon is a close second. Maplewood-smoked bacon has some lovely sweet notes as well.Leaner bacon: If you want leaner bacon, you can use center-cut bacon. This is just regular bacon with the fatty ends cut off.
