These sweet and salty maple bacon brussel sprouts are a show stopper! Whip up this easy side dish for a tasty dinner addition or even add to your holiday meals.
In a large skillet over medium heat, cook the chopped bacon until it's crispy. Remove the bacon pieces with a slotted spoon and place them on a paper towel-lined plate. Leave the bacon grease in the skillet.
In the same skillet with the bacon grease, add the halved Brussels sprouts. Sauté them for 5-7 minutes, or until they start to brown slightly.
Drizzle the olive oil over the Brussels sprouts and season with salt, pepper, and red pepper flakes. Add the maple syrup and toss everything together to coat evenly.
Transfer the Brussels sprouts to a baking sheet, spreading them out in a single layer. Roast in the oven for 15-20 minutes, or until the Brussels sprouts are tender and caramelized.
Remove the Brussels sprouts from the oven and sprinkle the crispy bacon pieces and pomegranate over them. Toss gently to combine.
