In a large skillet over medium heat, cook 4-6 slices of bacon until it's crispy. Remove the bacon pieces with a slotted spoon and place them on a paper towel-lined plate. Leave the bacon grease in the skillet.
In the same skillet with the bacon grease, add the 1 lb 450g Brussels sprouts, trimmed and halved. Sauté them for 5-7 minutes, or until they start to brown slightly.
Drizzle the 1 tablespoon olive oil over the Brussels sprouts and season with salt, pepper, and red pepper flakes. Add the 2 tablespoons maple syrup and toss everything together to coat evenly.
Transfer the Brussels sprouts to a baking sheet, spreading them out in a single layer. Roast in the oven for 15-20 minutes, or until the Brussels sprouts are tender and caramelized.
Remove the Brussels sprouts from the oven and sprinkle the crispy bacon pieces and ¼ cup pomegranate arils over them. Toss gently to combine.
