Tender shrimp are coated in a sweet and savory homemade General Tso sauce for an easy dinner that's ready in about 30 minutes. Serve it with rice and vegetables for a complete meal.
Pat 1 pound large shrimp dry with paper towels. Transfer shrimp to a bowl, season lightly with ¼ teaspoon salt, and toss with 4 tablespoons arrowroot powder until the shrimp are coated evenly.
Heat 2 tablespoons oil in a large skillet over medium-high heat. Cooking in 2-3 batches (so the pan isn't overcrowded), sauté the shrimp for 1 minute per side, until they start to turn pink. Set them aside on a plate. *The shrimp will not be fully cooked at this point.
Rinse or wipe out the skillet, then return it to the stove top.Heat 2 tablespoons sesame oil and add the minced 2 teaspoons ginger, 2 cloves garlic, 1 teaspoon sesame seeds, and ¼ teaspoon crushed red pepper, if using. Stir occasionally for 1-2 minutes, until fragrant, then stir in 3 tablespoons honey, ½ cup coconut aminos, ½ cup chicken broth, 1 teaspoon rice wine vinegar, sea salt, and black pepper. Whisk in 1 tablespoon arrowroot powder.
Bring the sauce to a simmer and cook, stirring occasionally, until it's thickened slightly.
Add the shrimp back to the skillet with the thickened sauce, tossing it gently to coat. Allow the shrimp to finish cooking in the sauce, stirring occasionally, about 2 minutes.
in a separate small skillet over medium heat, heat 2 tablespoons olive oil. Add 3 cups snow peas and ¼ teaspoon salt, and sauté for about 3 minutes. Once the peas turn bright green in color, sprinkle with sesame seeds and remove them from the pan.
Sprinkle the General Tso Shrimp with sesame seeds, more crushed red pepper, and sliced 2-3 green onions. Serve over cooked rice with sautéed snow peas.
