Preheat your air fryer to 360°F (180°C). Meanwhile, slice the bread into 2-inch wide pieces. Whisk the eggs with milk, vanilla, and seasonings. Place the cut bread in a shallow container (like a pie plate). Dip the bread in the batter, then gently turn the pieces of bread to fully coat each piece. Let excess batter drip off and set the pieces aside. The pieces should be coated but not soggy. Wait about 5 minutes to allow the bread time to absorb the liquid.
Spray the air fryer basket or place a piece of parchment paper on the bottom of the basket and spray it with oil. Working in batches, place the French toast sticks in the air fryer basket with a little space between each one.
Close the air fryer basket and cook for 4-5 minutes, stopping halfway through to flip the pieces. Serve immediately with maple syrup and powdered sugar.

Notes
Use day-old, stale bread. Fresh bread will not absorb the batter as easily.
Cooking times may vary depending on the thickness of your bread slices and the specific model of your air fryer.
Cooking whole slices: Follow this exact recipe, but don’t cut it into sticks first and cook for an additional 2-3 minutes. The edges will end up fairly crispy because it takes longer to cook through to the middle of the slices, but some people may enjoy that!
Storing leftovers: Transfer cooled pieces of cooked French toast to an airtight container.
Reheating in the air fryer: Place a piece of parchment paper in the bottom of the air fryer basket. Place the French toast in the air fryer basket with a little space between each one. Reheat at 320°F 160°C) for 2-3 minutes, just until warmed through.
Freezing: Allow the pieces to cool completely. Transfer the pieces to a parchment-lined baking sheet with a little space between each one and set it flat in the freezer. Freeze for 2 hours, then remove the frozen French toast from the baking sheet and transfer them to an airtight, freezer-safe bag. Squeeze all the air out of the bag, seal it, and freeze for up to 2 months. Microwave or air fry whenever you’re ready to eat them!
