2smallgarlic clovespeeled
2½tablespoonslemon juicefrom 1 large lemon
2tablespoonsnutritional yeast
½teaspoondijon mustard
½teaspooncoconut aminos
¼teaspoonapple cider vinegar
½teaspoonsea salt
¼teaspoonblack pepper
Instructions
Using an Immersion Blender: Add all the ingredients to a tall cup or bowl. Using an immersion blender set to low power, blend the ingredients until smooth.Whisking by Hand: Smash the garlic clove, and mince it finely. Finely chop the anchovies, then whisk all ingredients together in a bowl.
Season to taste with salt and pepper, and transfer to a small jar with a lid or other airtight container. Keep refrigerated until you are ready to use it.
Notes
Substitutes for whole anchovies
3/4 teaspoon Worcestershire sauce
1/2 teaspoon fish sauce
1 teaspoon anchovy paste
If it isn't important for the Caesar dressing to be dairy free, you can substitute the nutritional yeast with 1 tablespoon grated Parmesan cheese. To increase the protein, use 2/3 cup plain Greek yogurt instead of mayo.
Storage: Refrigerate the dressing in a tightly covered jar or other airtight container and use within 5 days.
