½cupchocolate chipssemi-sweet or other variety of choice
2teaspoonscoconut oil
¼cupcoconut flakes
¼cupraisinsgolden raisins, or other dried fruit
¼cupchopped almondsor chopped nuts of choice
Instructions
Line a sheet pan with parchment paper or wax paper. Set aside.
Wash and dry the apples. Core and cut each apple into about 8 slices. Optional step: To keep the apple slices from browning, add them to a bowl with lemon juice, and toss to coat.
Add chocolate and coconut oil to a microwave-safe bowl. Microwave uncovered, in 30-second increments on High power, stirring between each. Repeat until chocolate mixture is smooth, glossy, and fully melted.
Dip each apple slice halfway into the melted chocolate, then press one side of the melted chocolate into a bowl of nuts, coconut, and/or raisins. Set the dipped apples on the prepared sheet pan for 15 minutes or so, until the chocolate hardens.
Serve immediately or store covered in the refrigerator for up to 24 hours.

Notes
Use any type of snacking apple that you enjoy. Good choices include Honeycrisp, Envy, Granny Smith, and Gala.
I recommend dipping the slices in lemon juice to help prevent them from turning brown too quickly.
Keep this snack refrigerated in an airtight container and enjoy within 1 day.
