Wash and slice the potatoes into fries, then set them in a bowl of cold water for 15-20 minutes to draw out excess starch. Use paper toweling to pat the potatoes dry.
Preheat the air fryer to 400°F (200°C).
While you wait for it to heat up, toss the potatoes with 2 tablespoons of oil, plus the salt and pepper.
Arrange the homemade fries in a single layer in the air fryer basket. *You'll most likely need to cook them in batches so as not to overcrowd the basket.
Air fry for about 17-20 minutes, stopping halfway through to shake the basket, to rotate the placement of the fries.
Notes
To store, let the fries cool completely, then store them in an airtight container in the fridge for up to 2 days. To reheat, pop them back in the air fryer at 375°F (190°C) for 3–5 minutes until crispy again.To make sure your fries turn out nice and crispy, soak peeled and cut potatoes in cold water for 15-20 minutes to draw out excess starch, then rinse and pat dry before cooking.
