Pomegranate Salad with Spinach and Avocado
Pomegranates are one of the many things I love about winter. When you add their seeds to a vibrant, green salad like this one, it’s like Christmas in a large bowl! It can also serve as a beautiful salad on your holiday table. I love the look of juicy pomegranate seeds, they remind me of little, red rubies. Our neighbor has a pomegranate tree that is ready to harvest each winter. Every year, it blooms, and I immediately think of this kale salad.

We love this green salad because it offers delightful flavors and textures, creating a mouthwatering pomegranate salad.
The fresh, crisp bases of leafy greens and sweet and tangy pomegranate arils will perfectly complement the creamy avocado and goat cheese, resulting in a gorgeous pomegranate salad recipe.
The homemade balsamic vinaigrette, with its rich olive oil and aromatic garlic, ties all the ingredients together, resulting in a balanced and satisfying dish that’s both nutritious and indulgent. Pecans and honey walnuts are a great addition for extra texture and crunch.
I love the bright pop pomegranate gives to dishes, especially seasonal salads like this one. It works so nicely with the spinach and avocado salad. You can also add lemon juice to give it a nice citrusy flair.
Pomegranate, Spinach and Avocado Salad Recipe
The salad ingredients are fresh baby spinach, kale, pomegranate arils, avocado, red onion, and goat cheese. It’s drizzled with a quick balsamic vinaigrette and tossed to perfection.
Baby spinach- Baby kale
- Pomegranate arils
- Avocado
- Red onion
- Crumbled goat cheese
- Olive oil
- Balsamic vinegar
- Teaspoons black pepper
- Garlic, minced
- Lemon juice (optional)

Substitutions/Variations
The beauty of salads is their flexibility. This salad is delicious with feta cheese instead of goat cheese. You can also substitute baby greens for the spinach base! You could add red wine vinegar if you enjoy a tangier flavor than the balsamic vinaigrette.
Adding nuts to this salad adds a great texture. Pecans or sliced almonds would be delicious!

You can whip up this fabulous Pomegranate, Spinach and Avocado salad in a snap! Simply add each ingredient into a large bowl, and then toss lightly after dressing the salad.
👉 If you’re making this in advance, be sure to add the dressing either right before serving or leave it on the side so your guests can dress the salad themselves, and then you can save any leftovers. Also, you can use the back of a wooden spoon to help drizzle the dressing over the salad. This will help spread the dressing around the salad evenly.
This salad would be perfect for a holiday party or get-together or a casual dinner at home.

Pomegranate & Avocado Winter Salad
Ingredients
Winter Salad
- 2 cups baby spinach
- 2 cups baby kale
- 1 cup pomegranate arils
- 1 avocado
- 1/4 red onion
- 1/4 cup crumbled goat cheese
Balsamic Vinaigrette
- 3/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/8 teaspoons black pepper
- 1 clove garlic minced
Instructions
Make the Salad Dressing
- Whisk all ingredients together and season with salt and pepper.
Assemble the Salad
- De-seed the pomegranate and thinly slice the onion.
- Add greens, pomegranate, goat cheese, red onion, and avocado to a large bowl.
- Drizzle with vinaigrette, gently toss, and serve immediately.
