Are you wondering what to do with all your leftover Thanksgiving food? Sure, you can use the turkey to make a great bone broth, and leftover ham is great in things like Lentil + Ham soup, but what to do with all the leftover stuffing and cranberry sauce?
This is what you do with it! These stuffing waffles are crispy and savory, and when you top them with an egg and a bit of leftover cranberry sauce, it’s an absolutely perfect breakfast, and a wonderful way to enjoy holiday leftovers in a new and reimagined way!
Whatever you do, don’t forget, waffle irons aren’t just for traditional waffles! I’ve been known to make omelets in them, and now these leftover stuffing waffles!
- Stuffing, any kind you like or have leftover.
- Oil or Ghee, preferably sprayable. This will keep the stuffing from sticking (I like this sprayable ghee oil). Butter tends to burn a bit on the fast side for this recipe, but you can also use that too if it’s what you have or prefer.
- Cranberry Sauce. I love this Paleo recipe, but any version you have works great!
- Eggs, optional. The eggs make this a complete breakfast!
How to Make it
- First, preheat your waffle iron to a medium heat. Spray it lightly with oil or ghee.
- Spoon about 1/2-3/4 cup of leftover stuffing onto the center. The amount you add will depend on the size of your waffle iron.
- Close and cook the waffle for about 4-5 minutes.
- The waffle should be nice and crispy, and it should release easily from the waffle iron when it’s ready.
While the waffles are cooking, make your eggs however you like them. Scrambled, sunny side up, air fried, and over easy are all wonderful choices!
Once the waffle is done cooking, carefully transfer to a plate and top with an egg. Season lightly with salt and pepper, then spoon a bit of cranberry sauce on top of everything. Repeat the waffle cooking process and serve immediately, maybe with a lightly sweet banana coffee smoothie!

Leftover Stuffing Waffles
- 2 cups prepared stuffing
- 2 teaspoons oil or ghee preferably spray
- 4 eggs optional
- 1/4 cup cranberry sauce optional
- Preheat your waffle iron to medium heat. Spray or rub lightly with oil or ghee.
- Carefully spoon 1/2 cup of stuffing onto the waffle iron. Close the waffle iron. Cook for 4-5 minutes. The waffle should be crispy on the outside but not burnt.
- Meanwhile, cook the eggs in any way you prefer.
- Transfer the waffle to a plate and top with the cooked egg. Season lightly with salt and pepper. Spoon a tablespoon of cranberry sauce on top and serve. Repeat the waffle making process.
